Eton Mess Recipe

It's nearly the 4th of  June and the birthday of this great recipe – Eton Mess. We've started to see tasty Summer fruits popping up and it might be a tad optimistic to say it's seasonal already, but if you start practising now by the time Wimbledon rolls around you'll be a pro.

This week's recipe is a winning formula: easy to make and intentionally messy!

You will need:

450g strawberries
1 tablespoon caster sugar
4 ready-made meringue nests, broken up
400ml double cream, softly whipped
4 bowls/glasses to serve
Whisk
Mixing bowl
A Wooden spoon

How it's done:

  • Chop strawberries into quarters
  • Whip double cream with sugar until it starts to thicken
  • Crush all 4 meringue nest and add to the bowl
  • Add half the strawberries and mush slightly with a wooden spoon
  • Split the mixture between 4 bowls
  • Top with strawberries
  • That's it, get stuck in!

I LOVE WEEKEND – The Grant Property guide to what's on in YOUR city this Bank holiday weekend.

Are you excitedly awaiting this bank holiday weekend or still squeezing in revision before your last exam? Whichever situation you are in it is the weekend and wherever you are it's important to have some you time.

We have a very conscientious recipe this week, it's meat free since it's The Vegetarian Society's National Vegetarian Week. It's a veggie lasagne, great with salad or chips and garlic bread too! You can see it here. We learned this week that parmesan is not veggie friendly (who knew) so remember that if you plan on dazzling any vegetarians with your culinary prowess this weekend.

Up North the wonderful musical that is Wicked is hitting HMT all the way through to next Saturday. Treat yourself, it's fabulous!

Also one to enjoy for the whole week (although opening night's always the most fun) in Dundee The Duncan of Jordanstone Art, Design & Architecture Degree show opens tonight for a week. There's also a live stream via their website, something to remember if you head along.

On Saturday night in Stirling head along to hear the sweet sound of Apphia Campbell at The Tolbooth. She's performing 'Black is the Colour of My Voice', beautifully inspired by Nina Simone before she takes it to this year's Edinburgh Fringe.

If you posses a sweet tooth you need to be in Glasgow tomorrow for the JellyBear Grand Opening Party. JellyBear is the newest foodie delight to hit Glasgow's Merchant City and there will be tasters from 1-3pm on Saturday. It even offers vegan cake!

You don't have to be a theatre buff to want to head to Edinburgh's Playhouse. Derren Brown's In town with his much acclaimed one man show Miracle. He's playing on Friday and Saturday and quite frankly who could pass up the opportunity to see if it's all real?

Whatever you get up to stay safe, and if you make it along do any of the events featured in our blog share your pictures and reviews with us!

Gluten Free Mackerel Salad

This week it's Coeliac UK Awareness Week so we have a tasty and healthy salad that will make a yummy lunch when you're studying. It only takes ten minutes to make too!

You will need:

85g green beans
85g broccoli
1 handful baby spinach leaves
2 hot-smoked mackerel fillets (about 75g)
2 tablespoon sunflower seeds, toasted
75ml low-fat natural yoghurt
1 teaspoon lemon juice
1 teaspoon wholegrain mustard
2 teaspoon dill, chopped, plus extra to serve

Saucepan
Clean jar with lid
Bowl to serve

How it's done:
  • Skin and flake the mackerel (we recommend using a fork for this.)
  • Bring a pan of water to the boil then add the green beans and cook for 2 mins. After 2 minutes add the broccoli and cook for 4 mins more. Drain and leave to cool.
  • To make the dressing, combine all the ingredients in a small jam jar with a twist of black pepper, put the lid on and give it a good shake.
  • To serve, mix together the cooled broccoli and green beans with the spinach and mackerel in a bowl. Pour over dressing, scatter over the sunflower seeds and add a grind of black pepper and extra dill.
  • Sit down and enjoy. (Don't forget to put the bin out, fish can get pretty stinky left in the bin!)
