Grant Property - What's on Weekend

This weekend August starts and it’s been a pretty grey Summer but August has so much to offer in Scotland - here's our guide to what's on.

It’s been a while (almost 24 years) but all the way from their hometown of San Francisco Modred will be taking the stage at Downstairs in Aberdeen as part of their UK tour. Rock out to Everyday’s A Holiday with this thrash metal band who were making music before Rage Against The Machine.

In Dundee tonight from 9pm the UK Ramones are playing Beat Generator Live! and it’s bound to be a crowd please.

In Glasgow this weekend be blown away by Glasgow School of Art graduates Phoenix Exhibition.

In Edinburgh it’s all going on with the Edinburgh Fringe Festival - take a walk down the Royal Mile and be swayed by free tickets - the start of the festival is the time to indulge and make a day of it.

In Stirling August is starting beautifully with Project Y, a collection of four new and exciting contemporary dance works featuring exceptional young dancers and it’s just £5.50 for students too!

Grant Property Omlette

There are certain staple items that work really well when the cupboards are bare and there's not enough cash for a takeaway. We know that especially in Summer life can get really busy so now's the time to familiarise yourself with omlette making.

The great news is no matter who you're cooking for you can add to suit. Our recipe uses onion, olives, cheese and ham but you can mix it up.

What you'll need

  • 100g smoked ham
  • A small onion
  • A handful of sliced black olives
  • Cheese
  • Milk
  • Salt
  • Pepper
  • Oil for frying
  • Frying pan
  • Mixing bowl

How it's Done
  • Chop your onion into small chunks.
  • Tear ham up.
  • Crack both eggs into a bowl and mix with a pinch of salt and pepper and whisk together and add a milk.
  • Heat oil and gently fry onion and ham together until onion has started to turn golden before adding olives.
  • Add egg mixture and cheese and cook on a low heat until underside takes on a golden hue, then flip.
  • When the egg is cooked completely it's ready to serve.

Introducing Georgia Flanagan - Saltire Intern Social Media and Marketing Intern for the Investment Dept

Name Georgia Flanagan
Studying English Literature at St Andrews
Role Social Media and Marketing Intern for the Investment Dept.

What would you be doing with your summer if you weren’t here?

Well if I wasn’t working here, I’d probably be down South with my family enjoying the glorious weather they’re having! I would have gone to Wimbledon, which is without doubt my favourite sporting event, and would have tried to fit in a few holidays here and there!

So far what’s the biggest challenge you’ve faced in your internship?

The biggest challenge for me has been adapting to life in a big city I don’t know – I live in a small village in Surrey and go to university in St Andrews, which means I’m used to a much smaller scale of living. I have to say that I do love Edinburgh though, and I might be a bit of a convert – I still miss London but this is an amazing city to live in.

What have you most enjoyed?

I think I have most enjoyed the responsibility that the Investment team have placed on me. Some internships I have had previously have followed the line of the intern taking a back seat – making tea here and there and maybe being allowed to sit in on a few meetings. But at Grant Property, they have just given me tasks and projects to get on with, knowing and trusting that I will succeed and believing that my opinion is just as valuable. Whilst it is a lot of pressure it’s nice to be challenged and respected. And I love that.

As a new member of the Grant Property team what has impressed you most about the company since you started?

What has impressed me most is the team dynamic and the comradery involved in this company.
Everyone has been so welcoming and so nice, its just been amazing. As a young intern, coming into a well established, professional investment department was very daunting, but everyone is so supportive of each other and so friendly, any nerves were dispelled almost immediately. It's something that makes this company very special.

What three top tips would you share with students thinking about applying for the Saltire Foundation next year?

1. Would just be DO IT! Its been such an amazing experience, and has led to a really amazing summer. I never even thought I would get past the application form stage, just because I didn’t really think my CV or experience was good enough to get me recognised. But here I am, and I would recommend it to anyone. Just do it, and enjoy the experience. It's once in a lifetime.

2. Would be MAKE THE MOST OF IT – you will meet some amazing, successful people, and this is the opportunity to pick their brains of all and any information or advice possible. These are the people who were us once, and now own companies and corporations.

Network network network, as contacts are everything in business.

3. Don’t relax too much. It is definitely about learning, but you never know who is watching you, or where your fellow interns will be in 5/10 years. These could be your future employers or business partners, so remember to be at your best at all times – it will be worth it when that out of the blue job offer comes from someone who sat next to you on the Leadership Day!

The Grant Property Mac Cheese Recipe

We love mac cheese in every form. We'll eat the kind out of a box that's made up with milk and butter, love it in a pie but best of all we like proper, made from scratch cheesy pasta with a crunchy topping.

No matter what time of year it is this tasty delight can be a meal on it's own, a side or a straight out of the dish in front of Netflix affair. This is one case where perfection should be messed with try different cheeses and toppings– innovate! We've shared our three top tips below.

We love trying it with different types of pasta. Aficionados will tell you to have it with macarroni or penne so that the sauce can be scooped up in the tube but we quite like fusilli (the twirly type) and spaghetti too. Try some of our suggestions or let us know what you find works well.

  • Bake for 6 minutes until golden – watch carefully!
  • Cook pasta as usual but remove when al dente (cooked but still firm)
  • Melt the remaining butter in a saucepan and add mustard, a pinch of pepper mixing well.
  • Gradually stir in the flour spoon by spoon to make a rue.

BBQ'd herby, lemony chicken

The smell of BBQ in the air is a sure sign that it's summer and while the sunshine bit of Summer is pretty patchy you can make the most of the good weather by being barbecue ready.

This is a fun and easy recipe which will give you tasty Summer alternative to KFC AND it comes with a salad! It's easy to dry chicken too much on the barbecue but this recipe avoids that by using pounded, thin meat. This is known as a paillard and it's definitely an easy way to impress this BBQ season.

You will need:

  • 6 chicken breasts without the skin
  • 5 tablespoons olive oil
  • 1⁄2 tablespoon balsamic vinegar
  • 140g bag rocket
  • 25g Parmesan
  • 3 lemons
  • 2 cloves of garlic
  • 3 rosemary sprigs
  • 6 sage leaves
  • Cling film or baking parchment
  • Rolling pin or meat mallet
  • Sharp knife
  • Grater for zesting
  • Pestle and mortar
  • BBQ
  • Serving dish
  • Tongs

How it's done:
  • Place each breast between two sheets of cling film or baking and bash each one to ½ a cm thick using your rolling pin or mallet.
  • Finely shred your sage
  • Chop rosemary finely
  • Zest one whole lemon
  • Juice half a lemon
  • Crush garlic
  • Add crushed garlic,  pepper, salt, rosemary, sage and olive oil together and pour over chicken.
  • Chill chicken for two hours
  • Clean rocket
  • Shave parmesan using grater
  • Cut remaining lemons into chunk wedges
  • Add rocket, parmesan, oil and balsamic vinegar together – you have your salad
  • Once BBQ flames have died down spread coals out to create an even layer
  • Cook chicken for 1-2minutes on each side.
  • Transfer to a clean plate and rest.
Serve with salad and a wedge of lemon.
