Baked tatties are by their very nature versatile and easy to make. Not only that but they are cheap, filling and can be cooked with a microwave alone! We've advised using the oven here as in our humble opinion it makes for a tastier tattie – fluffy potato on the inside with a tasty shell.
Our recipe here tops them with a tasty Italian inspired topping but the variations are endless! It makes four – so treat your flatmates to dinner!
What you need:
- a fork
- sharp knife
- chopping board
- cheese grater
- oven tray
- small pan
- garlic press
- 4 baking potatoes
- 1 tablespoon olive oil
- Red onion (you will only use 1/2)
- garlic clove
- 60g pack sliced pepperoni
- 400g tin chopped tomatoes
- Fresh basil leaves
- 100g mozzarella
- Salt
- Pepper
How it's done:
- Preheat your oven to 180C
- Prick potatoes with a fork once - then place on baking tray for 1 hour - 1&1/2 hours
- Grate your mozzarella (or buy pre-grated)
- Finely chop red onion
- Remove the skin from your garlic clove and crush (if you don't have a garlic press crush under the heel of your knife)
- Tear pepperoni and basil
- Heat oil in a pan – gently cook onion at a medium heat until golden.
- Add and garlic and pepperoni and salt and pepper and cook for two more minutes.
- Add chopped tomatoes, turn up the heat to boil and stir regularly.
- Add half of the basil then remove from the heat.
- Potatoes are ready when they a knife slides through them easily.
- When ready remove and slice open, top with even amounts of Italian sauce, basil and cheese – then serve!
