Charity of the month: Myeloma UK

21st - 28th June marked Myeloma UK awareness week and this was just one of the reasons that we chose it as our June charity of the month. It's a cause close to some of our staff's hearts and this definitely drove this months campaign onwards.

Throughout June we've had lots of activities to raise awareness and money. Staff have been given the chance to dress down every Friday in exchange for a donation, we've had a bake sale, an egg and spoon race (which drew out some competitive streaks that are usually under wraps!), a pub quiz and our grand raffle too.

It's been a lot of fun but most importantly this month has definitely heightened awareness of the disease, not least in our offices.

We were overwhelmed by the generous donations for our raffle which varied from beauty treatments to a car valet. Our lucky winners are in for a treat. We are hugely grateful to all of the local businesses who donated for such a worthy cause, as well as to our staff who've baked, run and worn their jeans into work for a small price.

This month we are delighted to have been able to raise awareness for a very worthy cause and to have raised a tidy sum of £600! We're very happy with this and would like to say thanks again to everyone involved.

Death By Chocolate - Recipe of the Week

Tomorrow is Chocolate Pudding Day, yes, that’s right, there is an ENTIRE day dedicated to indulging in heavy chocolate treats (not that anyone needs it).

Below, we have an incredibly delicious sticky chocolate pudding with marshmallows.

It is really easy to make, and only takes just under an hour and can serve up to ten.

Method
  • Butter a large baking dish (about 2-3 litres in size). Sift the flour, ½ tsp salt, caster sugar, baking powder and 6 tbsp cocoa powder into a bowl. In a separate bowl, combine the milk, melted butter, eggs and vanilla. Mix the dry and wet ingredients together, then pour into the baking dish. This can be covered with cling film and chilled for up to 24 hrs.
  • Heat oven to 180C/160C fan/gas 4 and boil the kettle. Take the pudding out of the fridge and uncover, if necessary. Sprinkle the muscovado sugar and cocoa evenly over the pudding, then pour 700ml boiling water over the top.
  • Bake for 35-45 mins until the pudding is puffy and firm in the centre. Scatter over the marshmallows and return to the oven for 30-second intervals until they are just melting. Serve straight away – it will be hot – with cream or ice cream
Ingredients
  • 140g butter, melted, plus extra for the dish
  • 375g self-raising flour
  • 175g caster sugar
  • 2 tsp baking powder
  • 6 tbsp cocoa powder
  • 350ml milk
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • single cream or vanilla ice cream, to serve
For the topping
  • 450g light muscovado sugar
  • 7 tbsp cocoa powder
  • 2 large handfuls marshmallows

Tropical Summer Smoothie

This week's cool recipe involves a great trick to blend coconut water into your smoothies for extra hydration.

We've used tropical fruit here for a summer flavour but the trick will work with any savoury or sweet smoothie you fancy! This recipe is quick and easy and will make four servings, ideal for your whole flat.

If you've never tried it before, coconut's a great source of potassium which will help regulate your blood pressure and enhances your body's ability to hydrate too.

You will need
  • 500ml pineapple chunks
  • 250ml mango chunks
  • 250ml coconut water frozen into ice cubes
  • Half a banana
  • 125ml plain yoghurt
  • 10ml fresh lime juice
  • Blender
How it's done
  • Blend fruit together
  • Add coconut water ice cubes and lime juice and blend together until smooth.
  • Serve!
Top Tip

Using frozen fruit is economical, is less fuss and produces chilled drinks. If you are using fresh fruit chill in the freezer for an hour before making.
